Never use plastic containers to store salt and sugar. Salt and sugar tend to hold moisture early in the monsoon season. You should keep these in a glass bottle or stainless steel container. Also, they should be kept away from moisture and hot places.

Keep in the sun
Whenever the sun is out, keep your spices in the sun. This prevents fungal growth on the spices.
Save Your Spices With Cloves
In this season, usually, the white-colored fungus is found on powdered spices. To protect your spices from this fungus, put 2-4 cloves in it.
Roast Spices
